No, no, no we didn’t cheat and run down to the store to chow down on Mounds bars…we did a little maintenance on our garden yesterday and today which included Ingrid pulling all the weeds, shuring up our tomatoes and mounding the leeks. Piling up soil on the plant creates the white part of the leek due to lack of photosynthesis because it cannot get sunlight below the level of the soil. We discovered leeks a couple of summers ago and they’re great on the grill, so we are trying to grow our own. They take a long time to mature, so maybe we’ll have some by the fall. Today was also the day to try a little experimentation…Ingrid tried making a dough with Carpenter’s Cornmeal which is made from corn grown and ground in RI. We think that we’ll be able to make a rudimentary pasta or at least a polenta with the stuff. We also messed around with a great Ricotta made right here in RI by Narragansett Creamery. We found their cheese this winter at the Providence Winter Farmer’s Market. All their cheeses are really good, but their ricotta and feta are our favorites. Ingrid mixed some with honey and put it on strawberries and we mixed some with thyme, put it on a tomato slice and topped it with a violet blossom…very tasty!
Today also found us eating more hard-boiled eggs, greens and smoothies…tomorrow we get to eat whatever we want…we are going to Ingrid’s sister’s to help her move a piece of furniture (rumor has it that she’s going to try to give us a 100 mile lunch!) and then on to Chris and Grace’s in Charlestown for a little 4th fun!
